Organic Farmer and Holistic Chef. Private Chef to the discerning; I specialize in healthy, farm-to-table fare.

@aaronsternberg & I Sunday dinner date night, our healthy take on the smash burger:

Local grass-fed beef, caramelized onions, our homemade dill pickles, the best crispy potatoes (recipe below) , Gorgonzola cheese, dijon mustard, Primal sugar free ketchup, and butter lettuces. No bun. Use those hands. 🙌

How to make these best crispy potatoes:

1. Oven at 425F.

2. Boil a pot of salty water, it should taste like the ocean.

3. Wash & cut golden potatoes into roughly 1” cubes. I like to leave the skin on.

4. Cook potatoes in very salty water for 15-20 minutes. Until they soften but not falling apart.

5. Drain water from the potatoes.

6. Add 2T of grass fed ghee to the pot that you boiled the potatoes in. I do not recommend butter or olive oil, both will burn in the hot oven. Return potatoes to the pot and toss to coat in ghee. Some of the potatoes will rub off on each other. This will crisp up in the oven for a delicious crunch.

7. Sprinkle salt and pepper on the potatoes and toss to coat. I like to use a salt, pepper, garlic, onion spice blend.

8. Place the potatoes on a parchment lined baking sheet.

9. Roast them for 20-30 minutes - just until golden on the outside and soft & fluffy inside. You may want to finish them under the broiler for extra crunch.

One generation plants the tree, and the next climbs the tree to prune it. My husband pruning the cherry tree that my grandparents planted. We saved the apple & cherry wood that we trimmed and are letting it dry & cure to have for a bbq this summer.

Spring time, before the buds and blooms burst, is a great time to prune trees. Mi amor @aaronsternberg & I helped prune the fruit trees my grandparents planted by following these techniques:

Prune less than 30% of the canopy tree at a time. Gather pruning shears and saws. Clean and sanitize tools with soapy water and alcohol before pruning, when moving from one tree to another, and again when finished with pruning.

Paint Elmer’s glue diluted with water over large wounds on the tree to help seal and heal them.

We follow this 4D approach to pruning:

1.Dead : cut away all dead branches.

2.Diseased: cut away about 1/3 and then treat the dis-ease.

3.Disfigured: fix problem areas such as crossing branches.

4.Dysfunctional: suckers, or those that don’t produce flowers or fruit.

Dysfunctional branches may also include:

-suckers on grafted trees and anything from below the graft line

-water sprouts: will not be productive, are green and vigorous, they are growing vertically. Water sprouts may be pruned at any time. Cut them at the differentiation point.

-branches that are inadequately spaced

-branches that create a narrow and weak crotch (like a skinny ‘Y’ shape)

Brush on pruning terms such as: trunk, leader branches, terminal buds, auxiliary buds, flower buds, and latent buds, nodes, drop crotch, wound wood, codominance, and how to make proper cuts.

When or pruning, start with the trunk, then the leader branches. Visualize what the tree will become. Talk to the tree. Listen to the tree. Give it a tasteful and loving haircut.

Focus on Technique. Start thinning from the bottom, then pause, step back and look up. Create room for air and light. For hedges, maintain a natural shape and keep the bottom wider than the top.

Be patient and do not use improper techniques such as topping, hat racking, leaving stumps, and taking too much.

Compost your trimmings or save and cure the wood for cooking or firewood.

Properly dispose of any diseased branches by isolating and burning them in a closed environment, do not compost diseased material. Happy trees!

When or pruning, start with the trunk, then the leader branches. For trees and shrubs, prioritize the main branches and then move on to lateral branches.

Try the 4D approach to pruning. Prioritize your cuts in this order :

1. Dead : cut away all dead branches.

2. Diseased: cut away about 1/3 and then treat the dis-ease.

3. Disfigured: fix problem areas such as crossing branches.

4. Dysfunctional: suckers, or those that don’t produce flowers or fruit.

Pruning Terms:

-trunk : main middle, vertical section of the tree

-leader branches : those coming directly from the trunk

-bud: has leaf or flower potential. There are terminal buds, auxiliary buds, flower buds, and latent buds.

-node: shows promise of growth/ popping to branch

-codominance: two leader branches where in one, bark becomes included and will eventually cause a split.

-drop crotch: a branch coming out of a branch. To prune, cut down to the crotch.

-branch collar: prune above and outside of the collar.

-woundwood: develops when properly pruned outside of the collar.

-proper cut: is at a 45 degree angle, far enough above node to allow for new growth, and above the line of the bark collar of the tree.

Welcome to big sky country. I live somewhere near somewhere there. A couple weeks ago, friends & I saw the northern lights from atop those mountains. Enjoy!

There are two types of people in the world: Those who stir their peanut butter. And those who NOSTR.

I’m here to pet the NOSTRich.
