For the same reasons as why faxes, CDs, and Internet Explorer are still used by some companies and government agencies. Clients should write events to the user’s configured relays, yes. If I understand you correctly, yes, the list of profiles you follow should be sourced from each relay. Currently, I believe Damus just uses the connected relays, but seems better to source from the NIP-05 relays as well.

If relays are defined in the NIP-05 json, they should be the base relay set that clients use and follows should be the union found on those relays at a minimum.
