Most normal people have a fairly chaotic kitchen experience but if you watch the cooking channel or follow culinary YouTubers you’re probably unconsciously familiar with the French concept of “Mise En Place” — pre-staging ingredients in little cups makes for great TV but isn’t how most people cook 😇

It was still a touch try though. Next time I will try a wet brine before the sous vide cook and probably smoke at a lower temp as it dumped a lot of liquid during the smoke.

Based on my understanding, it’s actually better to smoke first— the raw meat will absorb the smoke better — but I wasn’t sure how to achieve the classic crispy exterior without a “finish” and wasn’t on short notice ready to attempt a three part cook haha
