It is just going in the smoker for 5ish hours. Love me some homemade bacon. This was a good, meaty belly, too. 
You have to wonder how it can be. I’m so tired of the “but it has never been done ‘right’” argument. It does still work to suck them in…. I’m baffled.
Cilantro and ginger
Not sure what started the #cilantrostr but ok. I’m not a fan, but it doesn’t taste like soap. What does is chunks of ginger in something like a stir fry. Yeah, figure that one out.

Letchworth State Park
Since we were driving through NY anyway the wife has wanted for some time to see Letchworth. Well worth the full day of hiking and seeing. 
Don’t discount leftover pizza, but curry is good too
