I run grapheneos and the installation was soo easy that I installed it trough my old phone while waiting for the bus. For the other options I agree but I still think a web installer could be made

Yesn't. Relays still have to be maintained by someone. The same goes for shopify backend. The fact that you are not the one maintaining it doesn't mean that it doesn't have to be maintained.
Pushing whole e commerce sites to the relay means that the relay operator would need to maintain a site (possibly not only one) for someone for free or litteral pennies
It's still proprietary. From non-coding tech-savy person prespective the open source one is better.
