Indeed, leaking IP to the relays occurs, and I think simplex might also leak IP to their servers. However, you can use a VPN or the Tor network to prevent IP leakage.
I think they are discussing nip44, which does not involve metadata leaks issue. However, Amethyst and 0xchat use gift wrapped + nip44, which can prevent metadata leaks.
Cashu is an implementation of ecash, offering more privacy than the Lightning Network. 0xchat is a privacy-focused chat application, hence it opted for cashu ecash instead of the Lightning

0xchat is compatible with amethyst. Are you using the same relay in 0xchat and amethyst? Also, check if the stranger conversation has the chat you're looking for?
