I live on 14.5 acres in Amish country in Ohio. I have raised chickens, turkeys, ducks, rabbits & sheep. I’ve planted cherries, hazelnuts, peaches, mulberries, paw paws, apples, pears & nectarines. I garden (badly) but I am learning more every year. I work remotely for a bank as a mortgage underwriter- fingers crossed I am still doing that when you read this. I hunt on my land - have gotten 5 deer since I moved out here. Into everything homesteading.

Morning Nostriches

1st day at work since the promo went into the system. They were supposed to make an announcement on Friday and did not, lol. Apparently I need the ego boo as it bothered me.

Starting the morning with a nice hot cup of coffee. Normally I drink mine an hour after it’s brewed, but we had an overflow this morning so I got a fresh pot.

Last night, I did a test run of scotch duck eggs. I found a wheat free recipe that uses chicken flour instead of flour.

OMG why have I never made these before?

Basically, you hard boil the eggs, spice and mix your ground meat, coat the egg in the ground meat, dredge in chicken flour and bake.

the egg retained moisture which made the yoke not "dry" like in a normal hard boiled egg. the chicken flour crisped the outer part of the whole thing nicely. Baled at 350 for 15 mins, turned, then another 10.

Chicken flour? I have something new to try

Good morning nostr, and happy friday. Finally back to the routine around here, so i have alot to catch up on. I'll probably do the turnover at the cabin, or at least start on it. A couple days ago we took our visiting family for a drive, and we ended up in a part of town we didnt know well. The houses all looked pretty new, but they were spaced so close together, it looked like no more than 4-5 ft apart. They all looked alike. I thought to myself that if i were going to live so close to other houses, i might as well just rent an apartment and have a lower payment.
