None of the two are acceptable. You are lucky that have a Pixel. Stick GrapheneOS on it and you have one of the most private systems possible. Then learn how to use that apps and download them in a privacy conscious way.
Because more privacy collides with auditability. BTC has prioritized the fact that everyone can check how many coins are minted at any given time. No airdrops, no printing out of thin air. That is more important that privacy, as important as privacy is. 21M and not one more.
Can you “remotely” connect an on-chain wallet (either on mobile, like BlueWallet, or on desktop, like with a hardware wallet + Sparrow) to a Bitcoin Core node (full or pruned) on a separate computer?
I have to believe you can, because you’re connecting to *some* node every time you use the wallet, but by default you’re just using the wallet service provider’s node.
In Sparrow you can choose a few others, like Bitaroo and nostr:npub1tr4dstaptd2sp98h7hlysp8qle6mw7wmauhfkgz3rmxdd8ndprusnw2y5g. But how do you connected it to your own node on a different device? Or to your Uncle Jim’s node? Or be Uncle Jim for your friends & fam, and connect their wallet to your node? Is it different if the node runs over Tor?
Many questions. Perhaps someone could point me in the right direction in terms of resources around nodes?

Not only you can but you *should* if you care about your privacy. That way only your node knows which UTXOs you are interested in.
Sparrow makes it super easy. Set up a node in an old computer, I usually recommend Start9, RoninDojo or MyNode as easier than going purely Bitcoin Core, but if you DYOR you can go that route too.
When I did my research a year or so ago, umbrel was super easy to install, but less secure. To me that was a deal breaker for any BTC application.
I went with Start9 and I am super happy. Tor-only right now, which complicates things a little but I am not technical and can managei it so you can too. Super clear and detailed documentation helps a lot. And clearnet access is in testing already so will come soon. After testing on a RPi I got a Server Pure, all FOSS and very good quality.
And customer service second to none.
And no, I'm not related to them at all, just a happy camper.
Strongly disagree. I've had to sell lots of sats last year, knowing it was weeks or a few months away from a severe NGU. Medical bills were paid, life continued to be and my family was happy. Zero regrets.
That is what "store of value" means. You store until your family needs it, not until some weirdo in the internet says it is cool to sell.

I went with Start9 after installing both and reading this:
Tl;Dr Start9 is a true operating system, not an app like Umbrel. Umbrel is further developed and has more apps but less safe. Umbrel looks a lot nicer but I don't care about that.
Stsrt 9 only accessible via TOR when away from home, clearnet coming but not yet there. That requires some extra steps with apps like Nextcloud but doable. Has been awesome and super stable all these months.
This said, I'm a pleb and not a dev so DYOR.

IIRC you are, in your own server that can be private. So you only store your stuff and what family/friends send you. Not a bad use for an HDD. But as I said I’m no expert. And I’ve been wrong before, once. Or twice. Or thrice….

There's servers somewhere, even if its this magical unidirectional queue thing, can I run a server? If I can't run the entire thing myself it's non-starter. What about multimedia embedding? attachments? asynchronous messaging to offline people?
I’m no expert but I run my own server with Start9. Dead easy, even I can do it. And the answer is yes to all you questions. Try it.
The obvious answer is the right one: STEAK. They’ll love Dad!
