If you use a wallet that allows for coin control, you should be able to choose which UTXO to send from. I think Sparrow and Nunchuk have that feature

Very different target audience ! Bitkey looks much more user friendly and good for on-boarding non technical users.
Where as Coldcard is more complicated but IMO offers better security and possibility to airgap.
