Yes metadata is an example where extensibility is definitely needed. CBOR and BEVE are binary, extensible and the types include the JSON types. BEVE is here https://github.com/beve-org/beve and it looks like all the encoding is defined right there in the small README.md file, which is far simpler than CBOR if I'm not misunderstanding.
Looks great! I should actually spend sometime writing a library for that in D, I dig binary formats.

QKSms for SMS. Sadly I am unaware of any app that does both fallback to SMS and normal IM/chat

Nah, it's using LoRa actually. The firmware is the RNode firmware which can be put into TNC mode.
That being said, I do want to get an 802.11ah radio and play with that. Alfa networks sells some, and they are OpenWRT compatible.
You'd be better off using normal WiFi for a mesh of normal latency, this is something I hope those in the meshtastic community get into as well.

No, they only can function as an interface for a Reticulum instance to use.
There technically IS uRNS which can be used for a full Reticulum instance on an ESP32, but this is not what I am running right now - I'm running the normal RNode firmware.
IPv6 over LoRa using my RNode. In order to create a TAP interface I have used tncattach which works with RNode's that have been configured to be in "TNC mode"
