I took a starting and final gravity using a hydrometer to calculate aaBV
The first picture is the starting gravity (a measure of how much sugar is in the beverage before pitching the yeast), the second picture is the potential ABV (which is 5%), and the last picture is the final gravity.
The 1.00 gravity reading in the final picture indicates the yeast did its job, converting all the sugar into alcohol; in this case 5% ABV.
From pitching the yeast to bottling, the process took about 3 weeks (not including the first fermentation which is when I made the kombucha or growing the SCOBY). It probably could have been done sooner but that's just how it turned out for me (I allowed time to let the sediment settle for a clearer beverage).
Given that I added the mango it could bump up the ABV ever so slightly but not push it past 5%. The sugars in the mango will restart a small fermentation which will carbonate the bottles (recall that the yeast used up all the sugar).

Hard Kombucha bottled!
This batch of Bitcoiner Booch was bottled with mango, making it a mango hard kombucha.
I added the mango into the bottles to aid with carbonation. The ABV came out to about 5%.
Tasting is tomorrow evening. Will post results.

Active fermentation by the yeast is creating ethanol and CO2 (bubbles seen in video) but the bacteria feeds off the ethanol (leaving only minimal ABV levels of 0.5-1%) creating the lactic acids associated with the tartiness of kombucha.

Fermentation is almost done (~14 days). I could bottle it after this but I want to clear it out a bit given the big floaties. I'll rack it into a new jug, let things settle for 10 days, and then bottle. After 2 weeks or so in the bottle, place it in the fridge, and it's ready to drink.

Perhaps maybe in the SW set up because they removed all units of fiat. That is, the SW app only denominates in Bitcoin. However, other wallets usually denote the BTC in USD, or another respective fiat currency. The unit of account is de facto fiat, not BTC. How often does one only reference BTC units for transaction fees? How often does one reference it's fiat equivalent?

Kombucha started. No pictures. Just looked like a gallon of black tea with the SCOBY in it. Give it 10 days or so and I have plain ol' kombucha, ready to bottle and drink. However, I will add more sugar to get the desired potential ABV and pitch the yeast. Then let fermentation do its thing for ~14 days and BOOM, hard kombucha.
What should I call it? Bitcoin Booch?

The SCOBY has formed. Next step is to make a gallon of sweet tea, add the SCOBY to it (and some of the liquid from the mother), and let it ferment into Kombucha for a week or two.
After the kombucha is ready, I'll add sugar to it, and yeast to ferment it into 5% ABV (or greater) hard kombucha.
