you get to see how they are with picking food - decision making
you get to envision a future together and see how your tastes align - see how you would match for the future, and also get a lot of insight on each other's past
also the walking part is really long, so you can see how they are with that, do they whine or not etc

I would be weary of someone suggesting IKEA as a first date.
the food is alright. you're literally trapped in a long walk. you're looking at stuff that implies living together.
but mostly, the fact that you're trapped with no easy way out. A good first date location/activity has an easy out for both parties because then you know if they stuck with the date, they probably had a good time because they could have left at any point.
