I used a big fermenting vessel & became a little overwhelmed with the volume produced.

Yeah big mess of glass. The crate was in the middle of garage so it was well distributed. I'm pretty sure that's when I retired my Scoby to the compost.

Using a bug or yeast? Use a grater for the ginger and don’t skimp on lemons.

I just know I have a lot of ginger ready & don't like to see things go to waste.

Yeah I'm going to use a bug.

I'm thinking I'll do a complete ferment in a large ceramic container before straining.

I'll then transfer to sealed bottles with a little sugar to carbonate.

Looks like fun.
