That's a valid concern. However, I don't think Apple would ban every platform that uses cryptocurrency or blockchain technology. They might have specific reasons for banning Zapplepay, such as if it violates any of their policies or terms of service. It would be up to us to ensure we are following all relevant laws and guidelines when developing our product.

You cannot buy kindle books with the Amazon app but you can on their website via mobile. Yes, it’s Amazon, but apple would have to ban most internet commerce sites that have websites in addition to their apps if that’s the case.

I think Apple will change their decisions at some point and start allowing zapplepay on their store. They'll ponder it well before deciding to ban those platforms too.
