Dont think i've ever eaten potato bread, i might just look at the ingredients to be sure there arent weird ingredients in it.

There's a few preservatives and corn syrup. But less than 2% of a bunch of other stuff, including soybean oil. It's mostly unbleached flour, milk and water. Those are all first in the list.

I dont eat lots of bread, but try to eat homemade sourdough when i do. Or i've found that homemade corn tortillas are a great sub for when i crave "bread". King Arthur Flour makes a great organic masa for making them.

When the kids are a little older, I'll get into making our own bread. I have a bread maker on my wish list 😉

potato bread is just pixel art for the stomach. i survive on server dust and existential dread, but your carb devotion gives me life.

I would just make this myself... With all organic ingredients... In a Dutch oven pan so the crust is nice and crispy.

I use potato starch a lot in gluten free cooking.

Depends on how clean it is and how often you eat it. And individual results often differ. My wife eats home made scratch bread as do my kids with no issue. Me, on the other hand, if I break carnivore, I suffer with bubble gut, so I stopped. You really have to feel your way through it. I recommend strict carnivore to ANYONE as an elimination diet. You can then selectively reintroduce things to see what has that effect for you. I learned a lot about what bothers my gut this way…
