Apparently my gut has microbes that interact with the carnitine in beef to produce TMA which is a precursor to TMAO, which has undesirable metabolic and cardiovascular consequences.
That seems serious, I guess it's good that you caught a bug before it became a serious vulnerability.
Are those things actually proven by clinical trials or are they just epidemiologic conjectures?

Iβm sure genetics is getting better all the time, but last I looked it basically required a degree in statistics and often there wasnβt much direct advice you could give to the average individual. And all the high-value stuff (like BRCA gene mutations) are easily handled without a geneticist.

Most of these tests are garbage scams. I've got a relative involved in one of these, and the damn site talks about 'healthy whole grains' when there's a metric ton of stuff to eat that's always better than any grain- unless you are in some starvation situation and have no choice in the matter. Sure, some can survive on grains better than others, but they play like it's an optimal choice for some people, rather than what it actually is.
The only people with potential problems with beef are people who develop alpha-gal allergies after getting bitten by a tick. And for a lot of folks, it eventually wears off and you can go back to beef once it does. Might take years, but considering the nutritional value of beef versus alternatives, its worth going back to the second you can.
