What’s the deal with the followers on Nostr some days I have 1k more, some days I have 1k less.
How does that work?

If you give it a bit they should all load in, it’s often due to the relays being slow so it appears lower at first.
It could also be from a relay being down if they down load in

Follower counts are a broken metric because it's only reported by the first or fastest relays to respond in a timely manner.
Only 1 relay?
It's all about relays. Something that remains to be solved.

It depends on the rlays and how the clients handle the discovery. You are not dealing with a monolithic connection from 1 client to a set of servers that have the same data. Some relays may hold a different set of “followers” - Moral of the story, let's be less concerned about followers and likes, and rather provide content that acquires the most sats. The real metric in the Nostr ecosystem.
The client is kinda doing a “follower query” in each relay, kinda like searching for things under the sand on a beach. Every time finds a “thing” it’s displayed in your follower count. Something this “things” have problems to communicate to the cliente (Damus, etc…) maybe the person that follows you move to another relay, maybe the relay has too much traffic, others…
My best practice for looking at this is go to Nostr.band on the web and search yourself. It usually give you the most precise number of followers plus other interesting stats. Talking from experience 🫡

Maybe clients getting relay information is like driving around in one county on asphalt, then you enter another county and the road turns to gravel. Then you go from that county to another one and it's a one-lane mountain road. Then the next you have to have a hover conversion because the "road" is in the sky.

It depends on what relays you are broadcasting to. Sometimes the relays are up or down, sometimes if you're not careful with what client you are using the relays can get scrambled up.
Best way is to Run your own relay so that you can get a copy of of all the posts you are posting and also subscribe to a bunch of other relays.
One way to be a self sovereign nostrich is to run your own relay aggregator. You can do that with @lnbits or you can choose any of the other relays out there that can do the same, but its still early so definitely do your own research and experiment.
Also, not every relay will propagate all the NIPs, they are only required to do NIP-01. So if its a blog long content form, not all relays will propagate necessarily.
Nothing here is set in stone. But I'm gathering that there needs to be more clarify on how this works.
