Just got a fresh delivery of beef from The Beef Initiative. I have a few cuts I don't know much about.

Any tips on preparing the following? Places I can cook them are on a pan, on a coal grill, in the oven, and in stew. I don't have a smoker besides putting the lid on my grill.

- Short ribs

- Merlot

- Tri tip

Other cuts I have, if you have specific ways of preparing them to share:

- bone in ribeye

- boneless top sirloin

- NY strip

- filet mignon

- chuck-eye

- chuck flat iron

I usually just grill or pan fry these and have them as steak. One time I made deep fried steak fries which were beyond amazing. I ate a whole steak's worth in one sitting.

I don't have any tips but you got me well interested.

Marinade the tritip and slow cool it for 1-2 hours

Can I slow cook in a coal grill if I keep the vents half closed? I guess I can if I keep an eye on the temperature.

Oh yeah. Doesnโ€™t have to be that slow, maybe like 250for 1 hour+, depends how big it is, how hot etc

Braised Short ribs. Takes about 3-31/2 hrs. to get tender.
