This looks amazing! Which veggies did you use? I have a ribeye I can thaw and cut up. I was thinking snow peas and bell pepper, but would love other recommendations ☺️

There are some pea eggplants, Thai basil, and yellow chili in the curry.

I would slice up the beef and either sauté it with a bit of salt or grill the whole thing. Then I’d make the salad dressing with fish sauce, palm sugar (or regular sugar), lime juice, and chili—balancing salty, sweet, sour, and spicy flavors in that order.

Slice the snow peas vertically, blanch them, and add some thinly sliced bell pepper, red onion, and chopped fresh cilantro. Mix everything together, and you’ve got yourself a bowl of yam (ยำ) — a Thai-style salad.
