I heard you can do the same thing with the camera. Download the Google/android camera then disable its Internet access.

The keyboard is terrible yes, in many apps you can't press back space or it joins your words together and it's generally slower to type on for me anyway. Some may think it's acceptable. Thankfully it's easy to install another keyboard.
