Is it possible to have "private" nostr accounts where you control who can and can't follow you? I think a lot of people value that element of Instagram/Twitter/Facebook. I'd feel safer posting pics on #olas, for instance, if I knew only people I trust can see my photos.

What would be cool is if apps allowed you to select which relays to post a particular post to. Post A goes everywhere my account connects to. Post B only goes to relays 3 and 7. Etc.

Yes. 100% agreed. That’s coming very soon too Olas; it uses NIP-29, which means you can create a private community only accessible for people you allow to come in and content is only published to the relay(s) where your community lives.

It is possible, but you have to consider HOW posts will be kept private. You cannot store unencrypted content on public relays if you want it to be private. That means it will likely involve posting the content to a relay you control, and that you can whitelist who has access to see your posts.

Running your own relay and setting it up correctly to allow only those you want to have access is still somewhat beyond the ability of the average user.

The option of being able to have a group of people who can share encrypted content with each other that only those within the group can see, even when posted to public relays, is being worked on. Not if it is a lockbox or zapbox relay.

Nope. Not possible. The notes transmitted in private chats are unsigned so relays wouldn’t accept them. And if someone published them elsewhere you have a level of deniability.
