I'm 188 pound's and get between 50-65gr of protein a day.

That's crazy low. You should have about gram per pound of ideal body weight. So unless you're overweight it should be 188g of protein per day.

Hard to consume that much protein and keep calorie intake be low 2000.

Why would you want to keep calorie intake low?

Any fiber goal other than 0g is most likely very wrong.

I did keto and carnivore and I'm having better luck now. Getting fiber without getting a ton of simple sugar is tough and we agree that simple sugar definitely needs limited.

Fiber needs to be limited as well. It likely causes constipation (yeah, the opposite of mainstream opinion).

Depending on weight, that’s a good amount. I do 225g 80% from beef

How does one even consistently get that much in a day?

A lot of protein powder.

Hard to imagine that either your objective/s or the rest of your daily routine would warrant that much protein.

Ha nice! What are you using to hit it? I always liked lean beef mince, turkey steaks, egg white omelette.
