Ribeyes cook quickly.
Use a hotter pan to get the crust without cooking the steak so deeply. Find thicker steaks.

Are some pans hotter than others or do you mean higher temp?
More heat & time preheating will get the pan hotter for that instant sear.
Cast iron tends to have more thermal mass, so it keeps that high heat for longer after adding the steak.
A thin ribeye won't need long (less than a minute each side).
In the end, nothing beats more practice. I'm sure puzzles appreciates the effort & intent. ππ«

Butter burns quickly & limits your temp range.
I'd use a dry pan to get the initial sear & add the butter just before turning.
Once seared the steak easily disconnects from the pan. You don't need butter/oil to avoid sticking, it's purely for flavour.
I don't frequently cook steaks in butter, I usually use a charcoal grill.

That pinkish stuff scared me because my biggest fear is making him sick. I literally tried to take the plate back to put it back on for a while and he practically stabbed me with the fork π

Beef is pretty damn safe. You could eat it raw but it tastes better cooked a little.
Yes! Get that pan scorching hot to get that crusty outside but rare inside.
You can even bareback that steak without butter in a hot pan.
If the steak is thin, throw it in straight from the fridge.
Then let it rest for a few minutes and cut it against the grain. Sprinkle some coarse sea salt. Do the chefβs kiss gesture. Youβre done π

Happy is always the man who tastes the meals prepared by his wife, and praises her after this feat! A steak is a steak.
I HIGHLY recommend 2 different cooking methods for easy delicious steak.
1: Sous Vide at 135Β° for 2 hours in a vacuum sealed bag with steak seasoning (works fresh or frozen straight from the freezer maybe do it a little longer from the freezer if desired). Then after cooking the steaks in either ice water or running water in their bags, open the bag and dry and sear on a hot pan at 350Β° with some butter or lard for a few min on each side. (There is a concern of plastic with this method due to the bag, but the water bath temperature is fairly low at least.)
2: Get a Bluetooth thermometer, I use a "Chef's IQ" I got as a gift. Just bake the steak and the app will tell you when to flip and when to remove to reach the target temperature at the center.
Both methods product delicious steak and pork chops! I even used the bluetooth thermometer for fresh salmon which turned out great. π

Getting an air fryer changed my life. Normally, I would do them by searing them in butter in my cast-iron and then popping them into the oven but since I got the air fryer, I havenβt even thought about doing it. I donβt miss the smoky apartment.
I simply season with salt and pepper and cut a few slices of butter over the top then set my air fryer to 200Β°C and then I flip the steak after five minutes. Throw a little more butter on the other side pull it out. Let it rest for a few, and it gives me the most beautiful medium, rare steak imaginable .
