Could maybe spread it out thin in a covered area, then scoop shovel at desired dryness. If you had a compost screening tray you could batch dry it in that. Either way a box fan pointed at it in some way would speed it up.
Also, shoulder steaks can be pretty fantastic. Grill them up and serve with a tropical salsa (like a pineapple mango type that you'd find for a fish taco recipe)
