How do Facebook and Instagram apps track what you do in the browser, even in incognito mode?
Meta apps start a local server on the phone and keep it running in the background. The Meta analytics script, running on most websites, pings any "localhost" server with the anonymized tracker ID for that session. The app then associates the browser ID with your Meta account, and voilà, all your browsing history is now linked to your Facebook account.
Android is designed to block such things, but Meta found a workaround using basic Sockets and transmitting the tracker ID in the initial handshake of a WebRTC (voice call) request. It's genius and evil as fuck.

I would set them up with decent inbound liquidity at the beginning and explain only later if it ever becomes an issue. Remember, they will likely not have that many customers at the start who pay with this. About the question of exchanging to fiat, I would again help only once that becomes a need for them. My general strategy is to hook them up at the start with a basic solution, and solve obstacles later.
I have guided small number people (not merchants) in the past with either onchain or lightning, and I never regreted going the self custodial way (what I see as the correct way).
What I found surprisingly easy was explaining backup seeds. Since it is a physical thing (piece of paper), people alredy have an intuition for how to work with it. Explaining this part well is imo important. Put emphasis on "Do not loose it or you will loose your money! It is a secret!"
Phoenix does backup seed and also it has the splicing function, which is their way to enable for onchain and lightning with a single app. Imo the best for noobs. Disadvantage is high fees.

Imagine you are the farmer and you have got 100 chickens. 3 of them are smart and learned how to sneak out during the day to enjoy freedom outside their fenced area. They return back in the evening, acting like nothing happened.
You, as a farmer, do not like it because sometimes they hide their eggs out of reach. It is a loss.
You could punish the 3 chickens. That would scare the rest of them away from atempting something similar in the future. Make the punishment spectacular. A kind of a show trial.
You could kill them quietly without a trial. From the perspective of other chickes, this will look like those 3 just disapeared for no reason. They would make for a good soup, but you are an egg farm, not meat farm.
In our case, you as a farmer decide to do nothing. You do not want to draw attention to the fact, that farm is not freedom, and that you are a tyrant. That real freedom is somewhere else. Besides, a loss of couple eggs a day is not worth the effort, if it does not make a difference in grand scheme of things.
One thing I did not mention yet is that you are not the owner of the farm, but rather an employee, like the people in state bureaucracy.
