I think the standard Nostr spec/nips are insufficient for a fully functional platform on their own, however I do like the simplicity and think they define a great "standard" for user signed content, and that is something all the devs are building on top of. Just my 2 sats.
Four app stores is about right I reckon. A good amount of redundancy and censorship proof. 
Can you still jailbreak latest iOS? Would that enable you to build/install custom apps without permission?
I find the Olas app kinda broken. Uploading is hit & miss, likes sometimes don't work. And forget about zaps. I want to like it, but it needs work.

Its a couple years old, never really got it to work very well. Then they moved to a tokenized model and I lost interest. Not sure of its dev status these days.
