Bok Choi is the "cabbage" in this recipe, it is a Brassica as well. Yes ferments do not have to contain Cabbage.
We make what we call Gardenkraut, and it is a combination of whatever surplus veg we have around so the flavour is different everytime.
Our latest batch has Bok Choi, Carrots, Beetroots, Celery and Garlic. We use a mandolin slicer on all veg except the garlic which is shaved with a cheese grater

All you need to do is keep the Comfrey leaves clear of the Elder tree for a few months and it will get taller than the Comfrey

We do our tomatoes at 30-40 cm, but we use the tomatoe hook trellis system so they are tall and heavily pruned.
I'd love to get into flowers eventually as well.
Covid lock downs were a wonderful thing for me. It gave me the time to put in a bunch of beds and bring in some decent soil. Theystill didn't produce a ton (partially due to our bad weather and short growing season). I got rabbits last year and started dumping their bedding directly on the beds and got better results than ever before.
I'm planning on building a pseudo Johnson-Su compost reactor to mix the bunny bedding, kitchen scraps, garden scraps, and wood chips from our wood splitting/firewood cutting area. I'm hoping to up the garden even more, but the composter will take a good year to produce the high quality compost I'm hoping to add. I've also been adding some small quantities of some amendments -- worm castings, azomite, and green sand to my beds to hopefully improve things even more. I'm loving it.
I've attached a picture of building our biggest, fanciest bed and some of the stuff grown in it the past 2 years. My newer beds, built a year or 2 later, haven't produced as well. I'm still building fertility in them and optimizing the automated watering.

While I would never say I had a wonderful time in the very extended Lockdowns we had to endure, I certainly did not waste any time while we were in them. Our market garden was built with sweat equity and repurposed garbage.
Your compost system sounds great except for the woodchips, they will take far longer than everything else to transmute into compost. I would use them in the very bottom of your pile to allow airflow from underneath.
Azomite and Green sand are both great mineral and magnetic amendments for your soil too, the raised bed looks great. You really don't need a huge garden to cater for one household
Compared to other plants that is spacing them out. Beetroots are 10-15cm between rows, Bok Choi 20 cm or less
Sort of, its a shadehouse in Summer. This one is made from Polypipe and what we call Star Pickets (T-Posts?). Ram the posts in and the right sized Polypipe simply slides over the posts.
This frame only has to hold 30% shade cloth for 6 months of the year so doesn't need to be strong, it bears no weight.

That frame is all metal and has cross bracing so can hold the weight of trellised tomatoes, cucumbers etc.

Here is the bed from the other day fully composted, raked flat, rows marked and planted with Celery 30 cm spacings. I didn't have enough transplants to fill the bed so will plant Parsley don't the far end to use the space.

Yesterday was harvest day and I decided to crop out this entire Beetroot bed as they never really grew to any decent size. These "Blemmy" Beetroots as we call them will be used in our Rainbow Salad mix (shredded carrot, beetroot and celery in a container) or dehydrated and turned into a powder to add to yoghurt or as an ingrediet in out Gardenkraut ferments. We are a tiny operation so we value add as much as we have time for.
This particular bed used to be a driveway, all I did to it prior to planting was broadfork it to break compaction. Next it will be flame weeded, broadforked again, top dressed with 400 Litres of compost then transplanted with 100 Butterhead Lettuce.

Most of these will still work, you might have to use more than one seed to compensate for germination % decrease over time.
Onion seeds are useless after 1 year so don't bother with any old onion seeds.
Shoe Goo was my best friend as a Skateboarder. We covered our new shoes with it to stop the grip tape from shredding the fabric.
Compost is a critical element in any Regenerative Agriculture system. In our farm it is they key driver of fertility and we use the no dig approach of applying all amendments to the soil surface allowing "gravity" and worms to incorporate them into the soil.
We currently have two composting systems, one is our Chicken Run which is a deep litter system and the other is piles made from horse manure and weeds from the gardens. The chicken powered compost is much higher quality and is pictured below.
This is 400 Litres of sifted compost applied to a 10 x 0.75 m market bed. This is the first compost this bed has received, next time it will get 200-300 Litres.
The bed was broadforked to deeply aerate before the compost was applied to the top and we planted this bed with 2 rows of celery. Celery likes fertility and water.
We are currently lightly planting our beds as compared with other similar market gardens as our soils were biological dead when we started so we are going easy on the soil for now.

Some of our readers may be unaware that we launched our business while all of Victoria was in Lockdown for COVID in 2021. We had to pivot from having a public open day to launch our business to offering home delivery only as we were not allowed near anyone. Even after Lockdown’s were lifted for most people we were locked out of almost all social settings and community groups, forced to keep reaching out to people in the only way we had available, online.
Now that almost all government imposed restrictions around COVID have been lifted we are finally in a position to pivot again and will soon have a public facing shopfront for locals and tourists alike.
Enter the Veggie Van! This beautiful old caravan pictured above will live across the road from our Farm in Rigg St, Rainbow. It will be open for business Fridays and Saturdays (hours to be determined) and will have a phone number to call for times when the Van is closed. We are making ourselves more available in order to service locals who don’t use computers much and the large amount of caravan traffic that drives through Rainbow every day.
