My next goal is to get users to reduce their relay lists from an average of 20 to 3.
You don't need to trust 20 relays. You just need 1. But 3 adds redundancy in case 2 of them are busy at the same time.
And remember: Relays can see what you are looking at in real time because the app is requesting the post, likes and replies from them as you scroll. They can even count which posts captured more of your attention.
So, make sure you trust your relay operators.

All of them, just keeping nostr.wine and my relay.
I've been neglecting to deal with my relay list for a long time. I removed about half of them but I haven't gone farther than that.
Already planning to do this once I have my strfry relay syncing (down, up or both) and streaming (down, up or both) for all my contacts (NIP-02 `kind 2` and eventually other lists) from their NIP-65 listed relays.
So you will mirror all notes of interest to you to a self hosted relay, and direct your clients to only use that relay? That sounds interesting, would like to see your implementation when it's ready, if you don't mind
You are making a trade-off here: censorship resistance vs privacy.
If that one relay goes kaput, do you go with it too? How are you addressing that?
That's why I said 3 :)
Not really, that relay could be yours and could take care of that censorship resistance for you by connecting to other relays owned by your contacts (two way syncing and streaming). Ultimately, you only need to connect to it (redundancy would also help still though).
If it’s your relay, unless you are using Tor to connect to your friend’s relays, can’t it be traced back to you? I guess adding a hop is better than nothing?
Yeah, not much more than could be found via `kind 3` (follow list) and `kind 10002` (relay meta), that are known anyways.
Private lists may help also in that regard.
And yup, VPN, Tor, reverse proxies can all help with IP address tracking for the private relay and clients.
What about Amethyst having a WARNING list of relays?
If the user puts a dangerous relay, amethyst will say "this relay tracks people, so be careful"?

I trimmed my general relays down to 4. But Amethyst keeps encouraging me to add more relays if I want content for various users in my list.
That's why I said my Next goal :) the current version still requires some amount of relays in the general section.
