Read a story to my kids today….o had no idea people ate dandelions.
Why do people eat them?
Just like any other plant, but for some reason here in NA they’re seen as “weeds” to be discarded.

I like them cooked in bacon grease with a splash of red wine vinegar
Sounds good! I’ll have to try it.
When I see a good patch I dig them up and move them to a more convenient area to make harvesting easier.

Nearly all the 'weeds' people don't like in conventional gardening are culinary/medicinal plants.
I second cooking them down in bacon grease! The bitters are good for you especially in springtime. Also you can bread and fry the flowers for a tasty snack that's not bitter. You can also make wine but I've never gotten that far I always just eat them.
And now what do you put in place of lettuce?
You can pop the heads off and dry them out to make tea
There's also this lady on YouTube (her channel is called Fy Nyth) who makes dandelion cookies, of all things!
