Turns out the hard work wasn't done. This lovely cut of meat came out drier than I would have liked.

Only thing I can think of are cooked too long, poor tenting job or I trimmed of too much fat to render tallow.

Any thoughts are appreciated.

I have no idea what could be the dryness issue. Dry beef is still better than no beef lol

Dry is usually from going too long, tough is usually too hot and fast. Brisket is tricky! Are you using a probe thermometer to monitor internal temp?

I was using the Traeger probe. Part of it looked like today beef.
