I agree with this. Gnocchi is such a simple recepy but because of that is so complicated to make the perfect texture.. a lot of things influences, not only quantities, as the kind of flour, the water temperature, how you mix it and for how long.. also the potatoes.. I mean, a lot is there.

Gotta recommend letting the potatoes steam off first for a while before mashing and then refridge over night. Getting the moisture out allows for using less flour and makes them much better.
