yeah, it's so good

i think it's 50/50 cow/sheep milk, and you have to squash the curds hard to make it properly

I make paneer by boiling full cream milk, adding a little white wine vinegar.

Then straining it through a muslin cloth, very nice.

Very keen to expand my cheese journey also, so will follow your progress with interest.

I’ve been wanting to start making cheese too- happy to follow along here! Any suggestions on a good recipe to start with? I have access to raw milk.

I started with just adding vinegar to milk but have found temperature is vitally important and rennit helps a lot in making a nice cheese. Mozzarella is fairly simple cheese but is the most hands on.

I was going to try mozzarella- seemed pretty straightforward. Should be fun experimenting.
