Soooo melty goodness
One of my friends despises Brie and I take her word for it, so I haven't tried it.

Cheese is good but Gruyère is my favorite for grilled cheese.

I think cheddar would overwhelm gru. Plus cheddar cooks differently I’d be afraid to do it together.
I'll try a gruyere grilled cheese then.
It sounds safer than David's brie suggestion.
Brie is insane fo grilled cheese. I would never use Brie.

It’s ok cheddar is delicious. When I cook grilled cheese, I pan fry it, but I don’t use butter. I use a thin layer of mayo on the outside of the bread.
Fun fact: you can put cheese inside *and* outside your sandwich. A crispy cheesy grilled crust is so good. A little shredded cheese once it's golden to melt, then flip and let it fry a bit.
Shredded cheese on the outside is the secret move. Amazing results.
Those little bits of fried cheese that fall off are so good, it only made sense to coat the whole sandwich in it.
I used to do it a lot when I was a teen. Somehow I stopped at some point.
