Extra sharp cheddar
Really? What bread do you use with it? I like cheddar as an accessory cheese, but have never really let it be the star of the show before. This is interesting

It’s ok cheddar is delicious. When I cook grilled cheese, I pan fry it, but I don’t use butter. I use a thin layer of mayo on the outside of the bread.
Fun fact: you can put cheese inside *and* outside your sandwich. A crispy cheesy grilled crust is so good. A little shredded cheese once it's golden to melt, then flip and let it fry a bit.
Shredded cheese on the outside is the secret move. Amazing results.
Those little bits of fried cheese that fall off are so good, it only made sense to coat the whole sandwich in it.
I used to do it a lot when I was a teen. Somehow I stopped at some point.

„Swiss“ isn’t one cheese, there are dozens of different cheese varieties in Switzerland. But if you’re looking for a cheese to put on a grill, I‘d suggest Halloumi as well. Swiss cheese varieties generally melt well (put them over some potatoes or pasta, or make a Fondue), but aren’t suitable for grilling IMHO. And there are many holes in Switzerland by now unfortunately…
I just learned of halloumi, but my market didn’t have it or maybe I just need to go in next time

I like a nice provolone or sharp cheddar. American cheese is the classic. Big ups for goat cheese mozzarella with thin sliced tomato, wilted spinach and pickled red onion.
Muenster is elite for melting but I find it a little lacking in flavor so mixed with a good cheddar on sourdough.
I think that’s the thing with professionals. They know which cheese mix well. I don’t even know what I want my primary cheese to be yet so I ordered a whole bunch
