There are more involved setups and i dont consider this the end all solution, but if ur currently just on custodial lightning... this is the next step that i urge you to get comftorable with.

Ive often thought a decent argument for keeping keys on a google pixel running graphene that you simply never turn online. Can keep keys in blue wallet + passphrase and use your daily driver phone to broadcast the transaction. Wouldnt be suspicious, pretty good security.

Ive used both wasabi wallet and whirlpool with sparrow for mixing. Both easy to use.

The servers serve to relay the info and help in discovery between peers i believe. Seth for Privacy has a good podcast he did with Evgeny, creator, back in Feb i believe.
Data is stored on your device from what i understand ( and the receivers device )
The incredible thing about simplex is that you can run your own server, so between your device and your server being run by you...i cant think of any protocol that provides more control over your actual content you senf, as well as your meta data. Its pretty impressive fro mhat ive learned.
With Start9 OS you can run a server with no technical chops whatsoever
Kinda the wrong use of word trust without context when in your clarifying comment later your trust issues derive from bugs and issues in the tech, and not issues such as closed source software or that devs were being deceiptful in project development or marketing.
