Feeling like spreading some kindness? Here’s a delicious sourdough bread recipe to share with your neighbors! ☺️

Ingredients:

Bread flour 250g

Dark rye flour 100g

Starter 70g

Salt 7g

Water 280ml

Instructions:

Step 1: Prepare the Sourdough Starter

1. Feed your sourdough starter with a ratio of 1 part starter: 1 part flour: 1 part water.

2. Let it rise until it reaches its peak activity (about 3 hours for mine).

Step 2: Make the Dough

1. Combine all the ingredients in a bowl. No need to knead—just mix until you form a shaggy dough.

2. Cover and let the dough rest for 45 minutes.

3. Perform a series of stretch-and-folds:

• Stretch and fold the dough once, then cover and rest for 45 minutes.

• Repeat this process 4 times in total.

4. Transfer the dough to a straight-sided container and let it proof until it almost doubles in size.

Step 3: Shape the Dough

1. Pre-shape the dough and let it rest on the counter for 20–30 minutes to relax the gluten.

2. Perform the final shaping and place the dough seam-side up into a well-dusted banneton or proofing basket.

3. Cover and refrigerate for about12 hours (cold retard).

Step 4: Bake the Bread

1. Preheat the oven to 220°C (with the fan on).

2. Once the oven is hot, remove the dough from the fridge.

3. Turn the dough out seam-side down onto parchment paper and score the top.

4. Place the dough in the oven and spray some water to create steam (if you don’t have a Dutch oven).

5. Bake for 20 minutes at 220°C.

6. Lower the temperature to 180°C and bake for another 20 minutes, or until the crust is golden brown.

7. Let the bread cool for at least 30 minutes before slicing.

I only had one bite because the naughty girl snagged it off the counter while I was busy vacuuming elsewhere. ( I don’t even have the picture when it’s done)

She knows she’s being cheeky, but she’s so sweet so she can get away with everything. 😩

ส่วนตัวแล้วไม่ชอบใช้ air fryer นะคะ รู้สึกว่าเนื้อสัมผัสมันไม่ได้ ชอบกินของอร่อยค่ะ 😂 แต่ของอร่อยบางอันมันก็ไม่ค่อยจะเฮลตี้ 😂 แต่ก็บาลานซ์เอาค่ะ

air fryer ส่วนมากเคลือบเทฟล่อน แล้วส่วนตัวไม่ค่อยชอบใช้พวกเครื่องครัวเทฟล่อนหรือ enamel ก็เลยตัดสินใจค่อนข้างง่ายค่ะว่า ถ้าจะทอดก็ใช้น้ำมันพืช/ไขมันสัตว์ทอดไปเลยดีกว่า อร่อยกว่าด้วยค่ะ 😋😝

ส่วนเรื่องการทำความสะอาด เรารู้สึกว่า air fryer ทำความสะอาดให้สะอาดจริงๆยากกว่าการตั้งหม้อใส่น้ำมันทอดค่ะ

I always do this with my cheesecake: When the cake is done, slightly open the oven door and leave it inside for 20-30 minutes. This gradual cooling helps prevent cracks on the top. 😊

I still don’t get it when people say, “Baking is my therapy.” Every time I try to bake something, it feels more like a nerve-wracking challenge! 😅🤣

Baking always makes me anxious because so many recipes demand absolute precision—exact measurements, the right ingredients, and strict step-by-step instructions. Even recipes I’ve made hundreds of times still manage to stress me out. 🙂‍↕️

Many many times that my husband has to step in to calm me down, saying, “everything will be fine.” Even my dogs act like my support animals during my baking meltdowns. Thanks, team! 😝🙏🏽

And yet… somehow, I keep doing it. 🤷🏽‍♀️ Maybe it’s because I care so much about the people I bake for. I just want things to turn out great and give them my best.

So here I am, multitasking in the kitchen, making pineapple tarts and banana bread for my family. Wish me luck! 🫠
