"sats the standard" came much later

today drove out to miaoli, taiwan where they farm mitten crabs. mostly known as a delicacy in shanghai cuisine, these crabs were mostly known to be from the jiangsu province in china

mitten crabs mature in seawater and spawned in freshwater. during the fall months the mature crabs make their way back to where they come from.

taiwan has it's native hairy crab species, but for a couple decades the entrepreneurs in miaoli decided to farm the more sought species from across the strait.

up until this year ive only bought these at markets and for most of my life only had these crabs in fancy restaurants. fun to enjoy food where it is being produced ๐Ÿฆ€

i was on a cooking book binge awhile ago. i learned a lot from a book called "ratio" (ruhlman) which i have saved as an epub on my phone along with others from libgen.

instead of looking up recipes from search engines which are almost always terrible slop, i search the book(s) instead and keep digital bookmarks ๐Ÿค“

depends on the crab.

these freshwater mitten crabs are mostly farmed, its sustainability comes down to economics as mitten crabs technically are invasive to Taiwan (taiwan has its own native species of hairy crabs ๆฏ›่Ÿน so ecological damage is somewhat limited)

ocean crabs have size requirements to meet and there are harvest quotas throughout the year -- there are even times out of the year where females aren't sold
