I brew espresso and immersion-drip equally and have recently enjoyed running the same bag of coffee through multiple brew methods to explore it a bit more. I tend to prefer medium-dark roasts in espresso and light-medium roasts for drip but am flexible.

What Onyx would you say might work best as an all-rounder?

Hey, thanks for the question!

As an all-rounder, I’d suggest Southern Weather. It is Onyx’s batch brew option in all cafes, but can also be used as an espresso (all of their blends can be).

Monarch is their darker option and the default for all of Onyx’s espresso-based drinks 8oz or larger because it does so well with milk.

Geometry is (I believe) used for smaller espresso-based drinks with less milk (<8oz) because of it’s more delicate flavor profile and lighter roast. I’ve enjoyed Monarch (classic, full-bodied) and Geometry (lighter, more tea-like) as espresso.

Tropical Weather and Geometry are both really good and lighter roasts. These tend to be my favorites of their blends for drip-style coffee.

Honestly, you can’t go wrong and I think you’ll like all of them. If I could pick two, I’d suggest Monarch for espresso and Tropical Weather for drip. Let me know what you decide and your opinion when you’ve tried them!

Regarding finding our niche — definitely trial and error and then iterating based on what the market was telling us.

It took a lot longer to find our niche then we would’ve thought, so the transition from employee to small business owner was tough!

We also left our jobs before our current business was up and running, which was risky. But we started small, were incredibly frugal, listened to the market and had a low time preference.

It’s been a lot of work and hasn’t come easy (our business was effectively shut down for two years because of COVID), but wouldn’t change our experience for anything. 🫂

If you like Apollo, I’d recommend you try Onyx’s Tropical Weather. Very fruity / floral and an Ethiopian coffee like Apollo. 👍

Fun fact: Our default zap amount is 116 sats because a 1:16 coffee-to-water ratio tends to be our go-to for most drip brew coffees. Despite the Specialty Coffee Association of America (SCAA) suggesting a "golden ratio" of 1:18, we find we typically like our coffees a bit stronger.
