You can edit your relay list, you probably are just connected to japanese heavy relays.
There's a number of them
1. Private relays are incentivized to provide good service and spam protection/moderation to their users since users pay them.
2. In other areas where we have many people/companies/markets depending on a piece of software, that software development tends to be decently funded. Bitcoin development is well funded. Apache development is well funded, etc. There will be many many apps built on and relying on nostr.
3. Many apps will or do suggest or require that a portion of zaps which you make through the apps goes to the app developers. This is very reasonable and can make a decent income for devs pretty quickly. I'm happy to contribute to development in this way, most users are too. If this is the standard model, devs have incentive to make the best nostr apps which can retain and attract large user bases.
4. Apps can include ads if they want. I'd rather zap than see ads, but I don't have a problem with ads. Premium features, like you say, is another option.
Keep in mind that at least for note storage, you can fit millions of notes on an android phone, hosting notes and relaying them is not that resource intensive. For other storage, there are many good existing P2P solutions we've had for decades that just need to be integrated to nostr. Every nostr client should route traffic to help the network in a true decentralized, censorship-proof, privacy preserving, P2P fashion.

Please remember that Olas is still very early and bugs do exist!
i.e. On Android, some UI issues exist with formatting on comments, the user profile, the settings page, and several places where dialog boxes have issues with dark mode. iOS seems to be fairly solid in terms of UI.
Important for new users to know: You can use many apps at once with nostr. You can login to Damus and Olas and any other apps you want, your content is not siloed with a specific app. If you already have a nostr client you like, no problem, you can use both simultaneously. Your nostr data is stored in the network, not the app.
Your relay list looks good no need to worry about your relay setup
You can think of relays like e-mail servers. You may be on the gmail.com relay, another person on the outlook.com relay, but you can both send messages back and forth to each other. Most apps connect to several relays by default. Which relays you are connected to determines what is in your "global" feed, which is curated by your app into "trending" or whatever other sections it may have. As long as you have one working relay, you are good, most users never need to modify their relay list and this is aok.

In most cases, when you upload a picture or video through nostr, you "note" is actually just a link, so you are signing the link not the item itself.
Any time you publish anything with any nostr app, you digitally sign the thing you are publishing automatically.
Try zapping another user. Some users you will be unable to send zaps to if they have configured zaps incorrectly on their side. I zap a dozen or so people a day, and this happens to me once every few days.
Global feed is also determined by your relays. Anti-spam measures on relays are in their infancy but getting better. Paid relays have almost no spam fwiw.
Haven't noticed this but many clients have implemented proof-of-work. Setting a PoW filter and/or enabling web of trust settings can help mitigate this as nostr grows.
Use coinos to start, add more complexity and self-hosting once you've got the hang of it. Zeus is a great non-custodial wallet that offers LNURL addresses
Coinos is great, it gives you a LNURL address.
Normal wallet addresses aren't sufficient, you either need a connection to a node (alby etc do this, you can host your own node if you want) or a LNURL address (like myname@lightningprovider.com).
People have some issues w primal wallets, I would suggest coinos https://coinos.io/
