How do Facebook and Instagram apps track what you do in the browser, even in incognito mode?
Meta apps start a local server on the phone and keep it running in the background. The Meta analytics script, running on most websites, pings any "localhost" server with the anonymized tracker ID for that session. The app then associates the browser ID with your Meta account, and voilà, all your browsing history is now linked to your Facebook account.
Android is designed to block such things, but Meta found a workaround using basic Sockets and transmitting the tracker ID in the initial handshake of a WebRTC (voice call) request. It's genius and evil as fuck.

Make it your goal to NEVER run any Meta apps on your phone.
I have had this rule for several years now.
It's sometimes a pain being unable to be in (e.g. sports/social) groups run by WhatsApp normies, but the advantages easily outweigh the disadvantages. It's such a joy not seeing the relentless virtue signalling and group replies.
Another huge silver lining: by refusing to use WA, you can bring many more family and friends to Signal.
We're going to be moving forward under the expectation that future Pixel devices may not meet the requirements to run GrapheneOS (https://grapheneos.org/faq#future-devices) and may not support using another OS. We've been in talks with a couple OEMs about making devices and what it would cost.

It might be a silver lining if we end up not having to use Google phones. And a dark world if Graphene is not supported on any hardware.

Assuming you want open source for your private notes, then NotesNook and StandardNotes (premium SN is not open) are great options. Personally I prefer SN.
If you already use vim/nvim, then continue using and sync with SyncThing which works perfectly. Only downside is for phone you have to use a different text editor such as Markor.
Obsidian is very slick, high functionality and seamless, BUT it is not open source, so I wouldn't want my private notes in there.

Bitcoin is going up in value against major assets and has overtaken Google and Amazon. But most people ignore something even better:
When a company goes up in value, a shareholder has some of that value diluted away via share issuances and employee stock options.
Bitcoin is the opposite. If you own bitcoin, your share of the value pie slowly increases over time as coins get lost, and some people burn coins.
