I didn’t scald but I can assume that when doing that it shrinks the skin and tightens down on the feathers. This is what I noticed when cinching the down feathers. The skin noticeably shrunk close to the meat

Great tips. I had a tough time with the chickens. A- the culling wasn’t a smooth process. B- the meat was very tough. The air rifle is now the preferred method.
The rabbits I’ll likely do are wild in our pasture so no emotional ties to them.

This duck was farm raised. Unfortunately he was being too aggressive towards the hens so he got the cut.
The taste of the duck fat alone is so tasty.
Apparently it’s easier when the duck is still fresh and warm. Only took me about 10 minutes. Wondering if the chicken is as easy?
I was just happy the kids and wife ate it and liked it. I’ll definitely be doing it again. Rabbit is next on the checklist.

Wow it was so GOOOOOD! Stuffed with red onion, garlic, thyme and fennel with a cinnamon maple syrup glaze at the end.
Let the fat drip down on some potatoes we grew.

Oh I saw some videos of those and was wondering how strong they were. Haven’t seen anyone put those in around where I’m at.
I ended up going with 8’ galvanized posts and used a hand driver to pound them all in. Definitely easier than digging hole and using concrete.

I just used the generic hardwood blend on the pellet smoker. I think a sweeter apple or cherry would’ve been a nice flavor as well.
