Hmm I wonder if Amethyst zaps are working. I clicked on the Zap icon under Luke, it popped up Strike which paid an invoice. But I don't see any zap note. Is this how it is supposed to work?

No. It isn't proof that a payment happened though.
I heard other Nostr clients post two notes per zap but that part appears to be missing from Amethyst (Android)?

There is no way to prove a LN payment or a LN channel balance to a third party without closing the channel.
Even if you set it up that way intentionally? What if you route through a server designed to confirm the payment?
Seems like a major flaw... What if Amazon wanted to let you pay the merchant directly, but still handled order confirmation and delivery?

Lightning native yes, so if you need to prove a payment, better use an invoice like this instead of doing a "zap" (a tip)

The lightning wallet receiving the zap has to support NIP57 for a note to display. Strike supports NIP57 with their LNURL service at strike.army. Only a few others support it at the moment like lightning tip bot from #[5]
Is stacker news wallet compatible with zaps? If no amethyst will send an ordinary lightning tip.
The zaps notifications are broken. I think the LN wallets have to support NIP57 to get the full βZapβ functionality with verification. Currently Strike doesnβt support this, not sure what Luke uses either.
No. You need a zap compatible lightning address provider and a zap-compatible nostr client.
If the client opens up your wallet with the lnurl, it can't work because the client itself needs to send special zap info to the zap endpoint for the zap to work.
What you should be seeing is your nostr client asking for an amount, you enter it, then an INVOICE opens in your wallet that you pay.
Amethyst can show zaps but I think it can't pay zaps.

I take it back, Amethyst loads an INVOICE in your wallet so I think it can do zaps. Sorry for the confusion.
