Due to what I am declaring my most successful Kombucha yet we now have passionfruit on the ceiling due to a volcanic fizz on opening.

The beagle is helping with clean within her reach but we have vaulted ceilings and she is only short so now I'm in for a huge cleanup.

And I can't stop smiling because I'm so cuffed with my fizzy passionfruit Kombucha.

Bet that was a wake-up!

If you cap them they tend to explode in storage.

I had about 8 bottles explode in the garage once. They were in a crate & it set off a chain reaction.

Putting them in the fridge stops fermentation. Gas also dissolves better in cold water so they don't fizz so much.

We drink it too fast to have any in storage. I need to develop a more efficient mass production process here before we are storing any. I ususally do a 3 day second fermentation on the bench then put them in the fridge a couple a litres a week.

I bet 8 bottles exploding made a huge clean up 😬

I used a big fermenting vessel & became a little overwhelmed with the volume produced.

Yeah big mess of glass. The crate was in the middle of garage so it was well distributed. I'm pretty sure that's when I retired my Scoby to the compost.

I have a lot of ginger ready to harvest.

Might have a crack at making ginger beer.

Using a bug or yeast? Use a grater for the ginger and don’t skimp on lemons.

No idea.

I just know I have a lot of ginger ready & don't like to see things go to waste.

Yeah I'm going to use a bug.

I'm thinking I'll do a complete ferment in a large ceramic container before straining.

I'll then transfer to sealed bottles with a little sugar to carbonate.

Looks like fun.
