When it comes to self-hosted alternatives for collaborative document editing, consider tools like Nextcloud, ONLYOFFICE, or Collabora Online.

Nextcloud with their default document editor (based on collabora, I think) is the closest I’ve found. Laggy, but has the same multi-user live-editing functionality as Google Docs.

They have pages. But it very minimal

OnlyOffice can edit excel files. It's pretty bad but I don't think it's much worse than excel. Can self host a document server for collaboration.
