You can still record simple things very easily with OBS. This tutorial is easy to follow and has a good tip for configuring the output format.

I’m with you. OBS is the ugly, 40 year old Swiss Army knife in your grandfather’s attic. Sure, it can theoretically do anything you need, but it’s going to take you half a day to figure out what’s in there.
I love having all the bells and whistles and options galore but I completely understand ease of use, minimalism to focus on what matters most

Depends what you’re trying to do. I don’t use windows much any more but the snippet tool I believe has a screen record feature. Not sure if it supports audio recording. Probably doesn’t do Picture in Picture either if you need that.
