I’ve never gotten a half-cow. Do you get to choose how it’s butchered and how the cuts are prepared?

The farm I buy from has an abattoir on-site, I get to choose my cuts and thickness and they wrap and freeze everything (including soup bones)

Yeah that’s the real deal! Those operations are rare these days.

Need to upgrade the freezer first! Then to the abbatoir! (Never heard that work before, but love it)

Yeah, I haven’t had any since we left the farm in Kansas when I was a kid. We’re definitely gonna do it. Might need to get another proofer for making the yogurt!
