Because I've used it for years and I use it with their email.
Proton is a good service and they accept bitcoin. If only there was a really easy way to run own email server...
They do accept bitcoin, though I've never used it as payment.
I have because I like the idea that they don't know my real identity + the mail is encrypted with my key, so they couldn't trace me even if they wanted... atleast not so easily.

It sounds like your use case is less about anonymity and more about mundane things like getting around the airport WiFi tracking/vulnerabilities. Which is cool, not everyone needs to be anon. Proton is fine for that use case :).
THIS. I use it when I leave my house and connect to WiFi that I do not own. I also use it at my house when I do bitcoin related things. That's it. It's not so much about privacy for me as it is for security. 🤙
You can pay for Mullvad vouchers over Tor with Lightning at https://vpn.sovereign.engineering/ then generate custom Wireguard configs (options for phishing blocks, ad blocks etc.) that you can plug into any Wireguard client. Or just use the Mullvad app.

I’ve also heard stories over the years of mullvad devs taking extreme caution, verging on paranoia. Thinks like neutering all the IO on laptops of company employees.

Still prefer that mullvad doesn’t ask for an email address at all. Proton knows my email address already for obv reasons. Separation of concerns is good for opsec.
I also think Mozilla switched from white labeling proton to mullvad. Wonder if there was a juicy reason for that or no.
