The mint know the destination but not who is sending it, correct. This is an intricacy of how LN works, there is a potential but complicated solution for this and that's source-based routing.
In principle, a Cashu wallet could contrusct the onion themselves and pass it on to the mint, much like how hosted channels work. It requires running almost a full Lightning client on the wallet side though.

Good analogy for how Chaumian mints work:
You enter a casino and buy poker chips with Lightning. The chips all look the same. You can pass those chips around to other players.
When go back home, you give the chips back at the counter and get your money back on Lightning.

PSA: as long as you're not using a Cashu wallet that can be restored from a seed phrase (currently: Nutshell-py, Nutstash Alpha, soon: all of them), things could go wrong and you could lose ecash due to some weird bug. Please treat it with care and only use small amounts. I'm very serious about this. I don't hold more than a few dollars worth of ecash myself in non-deterministic (seedless) wallets.
BUT HERE IS THE GOOD NEWS:
Determinisitc wallets are so much safer. Even if something goes wrong, you can just revert time and restore your entire balance.

Yes it would work but would be very risky to enter your seed anywhere (depending on what else you use the Bitcoin wallet for). The Cashu derivation path will be different from the on of your Bitcoin wallet though, so no interference expected.

Nope, I'm not sure what a stability pool is but it should be easy to build Cashu on top of stablesats (and have fiat-denominated ecash).
For the second half of this year, I will focus a lot more on integrating Cashu with Nostr and really identifying the strongest possible synergies:
- wallet to mint communication via nostr (IP privacy)
- user-to-user nostr contact lists, ecash transfers, ecash inboxes
- nostr wallet connect with ecash wallets
- collaborative wallet protocols for proof of liability checks
- and possibly more!
