Yeah there's a sweet spot.
I try to aim for about 120⁰C which is about 150⁰C on the probe built into the BBQ.
Too short a time & the connective fibres won't break down enough.
Too long uncovered (> 6hrs IMO) & you get dry meat especially in the bottom near the heat source.
I find transferring it to a dish after 5-6 hrs and placing a cup or so of water in with it makes it pretty full proof. Covering it is a good idea but the water stops it drying out. Water keeps the base from going over 100⁰C and keeps it moist. Too much water & the brisket losses it's flavour (a common problem I've found with restaurants).
The only thing to watch for is that the water hasn't evaporated. A good brisket has a lot of fat that renders & pools in the pan. It looks like water but gets a lot hotter. I sometimes transfer to an oven to finish which makes things a bit easier.

I understand your motivation but most people won't trust you if they can't see how you benefit. The precious metals guy at my market charges a premium and buys from people below spot.

Free will is not what most people think it is.
We have no direct control of our thoughts, feelings or actions despite our desire to believe we do.
I haven't read the book but I'm sure I'd probably agree with most of his arguments. I'd probably contest his framing.
Free will is related purely to the agreements we make. The sky is blue, the earth is round, bad people go to hell, authority is unquestionable, etc. Free will is the ability to create definitions & ultimately beliefs. Most don't exercise their free will, they don't question their beliefs. They just take it all as fact & assume that they can't change the nature of their reality. Most people don't break their conditioning from childhood. They don't explore the beliefs that are in their subconscious.
Our thoughts, feelings & actions arise as result of our beliefs & definitions. You can't even experience an emotion or thought without first having a belief. Everything you do, every action you take, is because you believe it's in your best interest.
Not everything you do is in your best interest.
Some people tolerate people walking all over them.
I find that just as disgusting as when someone tries to do it to me or my family.

The more gelatine, the easier it is to handle when it's cold & set.
Gelatine adds that smooth mouth feel to sauces, the kind that makes your lips smack together.
Depending on the type of stock & how much I've reduced it, I'll often hydrate some powdered gelatine with a little water and then add it to the hot stock at the end. It dissolves quickly in the heat & makes it set super firm.
It's then easy to slice into cubes to freeze. I always have stock in the freezer.
If you don't have stock or are using bought stock, hydrate some powdered gelatine with a little water & add it in. I add it at the end once everything is mostly cooked because it tends to burn off left on the stove for ages.
Nobody should feel they need to tolerate disrespect especially when it violates their private property.
