I run mine on Proxmox as well. I am thinking of moving it to Kubernetes just for fun.
I also have port forwarding through a VPS so the grandparents and cousins can all play together.

You can. However it will not be verified because it will not match your public key.
It is a way to verify you’re who you say you are. For example, if I’m a blogger with a website, I can use NIP-05 to link myself to my website domain and it will verify who I am. The verification will fail if you used my address with your public key.
